I don’t know if it’s been tried before, but you might want to try argon. It is used to help preserve wine by preventing oxidation at the surface (it is heavier than air so it “sits” on top of the wine). It’s possible that a couple squirts on top of the coffee will similarly prevent oxidation (or maybe the heat will prevent that from working. ).

Zojirushi is freaking amazing for temp stability.

Wife loves hers. She is not a “refined” coffeegeek, but still can appreciate the difference between hers and my espresso (and lattes) and based on her comments, would strongly recommend it. Best of all, they are super easy to clean since the whole thing disassembles – which is not the case for most thermal containers.

The downside to glass is it’ll break when metal doesn’t. In my old shop that’s what happened, but in a home you’re gonna take better care of it then my employees did!

Comparing the glass lined and stainless steel I can’t see that either is considerably or consistently better. But perhaps glass is better for taste and for cleaning compared with stainless steel.
